GREENE ACRES FAMOUS MUFFINS
1 cup milk
NOTES: Use water and dry milk powder/ canned milk or soy milk or regular milk - they all work great!
1/4 cup oil
NOTES: Use melted coconut oil, vegetable oil or corn or canola or safflower! They all work great!
1/2 tsp. vanilla flavoring
1 egg
2 cups flour
NOTES: we have made these with many different flours and the muffins are wonderful! Try spelt flour, whole wheat, unbleached all purpose
You get a different taste with different flours but they all turn out nicely!
1/3 cup demara sugar
1 Tbsp. aluminum free baking powder
1/2 tsp. sea salt
For BLUEBERRY MUFFINS: add 1 cup blueberries to batter
For CRAN/ORANGE MUFFINS: add in 1 tsp. grated orange peel - 1/2 cup craisins soaked in water -
1/2 cup milk + 1/2 cup orange juice instead of 1 cup milk
for APPLE CINNAMON MUFFINS: add in 1 cup grated apple and 1/2 tsp. apple pie spice
Mix batter - it will be very stiff - drop into muffin tins lined with muffin paper liners. Bake for 20 minutes at 375 or until pick inserted comes out clean. For a lovely yummy streusel topped muffin - mix up the Streusel topping and sprinkle on top before baking!
STREUSEL TOPPING
2 Tbsp. butter
2 Tbsp. brown sugar
1/4 cup flour
1/4 tsp cinnamon
mix and put on top
Makes exactly 12 regular size muffins that are very nicely sized and super puffy with nice high tops!
for a large 24 count commercial size muffin pan - double the recipe
