I made lots and lots of these for my son's rehearsal dinner! They are delicious with lasagna and other meals that you would normally serve french bread! The egg wash makes them shiny and crusty just like bakery rolls! The flavor is great too if you serve them with garlic butter for dipping! I make my garlic butter by using very soft real butter and using fresh minced garlic, a bit of garlic salt and parsley. Add in a dribble of olive oil and stir until creamy and soft! Yumm!
Here is the recipe:
In the BOSCH Kitchen mixer equipped with a dough hook place ingredients in this sequence:
3 cups warm water (110-120 degrees)
2 1/2 Tbsp. SAF yeast
1/4 cup sugar
1/4 cup vegetable oil
1 Tbsp. sea salt
4 cups unbleached bread flour
(4 more cups of same flour in the recipe below)
Mix on slow speed just to combine and let rest for 15 minutes. Then add in 4 MORE cups of unbleached bread flour or just until dough gat hers into a nice ball and is soft and slightly sticky but not tough and dry. Knead on speed 2 or 3 for 5 minutes.
Turn off mixer and place on center cover so dough can rest for another time period. After 30 minutes up to 1 hour later - turn on mixer to deflate the dough. Pinch off dough into 32 equal pieces and place on lightly greased baking sheets with at least 2 inches between rolls. Brush rolls with an egg wash and let rise approx 35-45 minutes in a warm place or until doubled in size. Bake in a 400 degree oven for 15 minutes or until golden brown.
MAKES 32 rolls!
