Herbed Pull-Apart Bread
"This is an amazingly simple thing to make with a BOSCH mixer and goes just perfectly with spaghetti, lasagna, or hearty soups and stews."
In the BOSCH mixer equipped with the dough hook and splash ring add in this order:
2 3/4 cups very warm water (115 degrees)
1 T. sugar
1 T. olive oil
2 tsp. garlic salt
1 tsp. sea salt
1/4 tsp. onion powder
2 tsp. Italian seasoning
3 cups Unbleached Bread Flour (we have a high quality bread flour here at MBM)
2 heaping Tbsp. SAF yeas (we offer this here too!)
Mix briefly on speed 2 and let rest until bubbly about 15 minutes.... then begin adding MORE unbleached bread flour, 3/4 cup at a time, until you have a soft dough. Your mixer should be running on medium speed while adding in the extra flour. Your finished dough should be slightly sticky and be careful NOT to be adding adding flour and get too much or you will have a very tough and heavy dough :(
Now knead for 4 minutes on speed 3.
Pull the dough out of the bowl after removing the dough hook and cleaning off the dough from it onto abuttered LARGE baking sheet (15x17) with sides. Let dough rest about 5 minutes and then pat it out to cover the baking sheet. If you don't have a sheet that large you could divide it. Dough should be pressed out to cover the sheet to about a 3/4 inch thickness. Now using a pizza cutter...roll down the dough in lines lengthwise and then crosswise making cuts that leave you with 1 1/4" wide strips that 3-4 inches long.
Now set aside the pan in a warm place to rise. Let rise for about 35 minutes or until puffy. Place in a hot oven (425 degrees) and bake approx 15 minutes or until golden on top. Remove from oven when baking time is done and brush with melted butter. Serve warm - this bread just pulls apart in neat little strips and is more than yummy! My family just raves over it!
