No Grains Granola
4 cups coarsely chopped pecans
1 cup finely chopped pecans
1/3 cup coconut flour
1/3 cup flax seed meal
1/2 cup unsweetened coconut flakes
1/2 cup coarsely chopped walnuts
1/2 cup coconut oil
1/2 cup pure organic maple syrup
2 tsp. ground cinnamon
Use a food processor and make coarsely chopped nuts. For the finely chopped nuts process until like a coarse cornmeal consistency.
Mix all ingredients well and bake on a lightly greased baking sheet or pan for 20-25 minutes on 275 degrees. Cool and add in, if desired,
dried apples, raisins or any other dried fruits.
My daughter created this original recipe as she eats a gluten-free diet. She doesn't add the dried fruit but pours 1 cup in her cereal bowl
each morning and pours it over with cold soy milk. Then she tops her bowl with fresh blueberries and a sliced banana. Yummm!
