Be aware that if you are grinding your own grain and thus making whole wheat flour you will not achieve the same results as when using unbleached flours like you purchase on the grocer shelf. But ALWAYS use unbleached if you are going to purchase flour as the bleached flours are bleached with toxic chemicals.


While unbleached has not been bleached and is a creamy color but then the bran, germ, oils etc...have been removed so it does not have near the nutritive value as found in whole wheat flour that is fresh milled.  You could try sifting out the bran in your fresh milled flours and it would give you a much finer textured flour then do NOT discard what you sift out :)  Use it to add to meatloaf or oatmeal or granola or? It is good for you! :) But NO you cannot acheive unbleached quality flour in a grain mill...when you mill you are milling the entire kernel and nothing is being removed. Hope this helps?
